After a busy, jam packed, 10 day trip, I am finally home...phew!

This trip was very special to me because I don't get to visit my family in New Jersey very often, so I was extra excited getting to surprise my grandpa by flying in to celebrate his 85th Birthday and spend quality time with all of my family. Every summer growing up I used to take trips to the shore with my mom, aunt, and sister, so it was a real treat that we got to escape for a night to unwind, eat amazing seafood, and relax on the beach like we used to back in the day. From NJ I went right to Texas for our Dallas and Houston Posh Parties which were such a blast and I loved meeting our Texas Poshers!

But you know the saying you need a vacation from your vacation--that is definitely how I am feeling right about now.  Glad to be back to blogging, though! Missed you!

What's Cookin': Bacon & Egg Cups






Looking for an easy breakfast recipe for this weekend? You're in luck! These bacon egg cups look super fancy, but actually take no time at all! 

Here's what you need for about 9 cups
4 whole eggs, 2 egg whites
9 pieces of bacon cut in half
2 tablespoons green onion
2 tablespoons basil
1/2 teaspoon red chili flakes
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Non-Stick spray
Muffin Tin

1. Pre- heat over to 350º and spray muffin tin with non-stick spray.
2.. Crack eggs into bowl and add all herbs and seasonings.
3. Whisk together until fluffy.
4. Using the halves of bacon, line the outside rim of muffin tins- one whole piece per cup. 
5. Fill bacon lined cups 3/4 way full with egg mixture.
6. Bake for 20-25 minutes until eggs are cooked bacon is to desired crispiness. (Tip: If you like extra crispy bacon, add the bacon to the oven before adding the eggs for 5 minutes)
7. Remove from oven and serve immediately.

What's Cookin': Chia Seed Pudding






Some of you may not know that cooking is a huge passion of mine. Growing up, I always took cooking classes, watched the Food Network religiously, went to food conferences, and ultimately thought I would become a chef--until I got to high school and knew had to be in the fashion industry. I haven't posted many, if any recipes here on the blog, but I love to cook and do it regularly so I want to start by sharing a simple, healthy, and delicious sweet treat--chia seed pudding! 

Here's what you need:
2 cups almond milk
1/2 cup chia seeds (easy to find at Trader Joes or Whole Foods)
1 teaspoon vanilla
1/4 cup maple agave syrup
1 tablespoon cinnamon

1. Start by mixing together almond milk, syrup, cinnamon and vanilla and whisk until completely combined.
2. Add in chia seeds and whisk.
3. Refrigerate for 2 hours, mix, and then refrigerate another 2 hours. The chia seeds start to soak up the liquid so it will thicken slowly. 
4. Serve with fresh fruit or a dollop of whipped cream- and enjoy!

If you like tapioca pudding, you will definitely enjoy this recipe! Feel free to add in any other ingredients you like, this just happens to be the version I made!

Flawed and Fabulous

Happy Friday friends! Today I wanted to talk about something a little different than I normally do- eating habits and being happy with yourself no matter what. (Deep right?)

How this all began was with my sister's Mexican destination wedding being just ONE month away, I really wanted to push my fitness and eating habits into high gear, and have been reading a LOT about the Paleo lifestyle, which really intrigued me. So I started last week, and was completely set up for success- I did my research, stocked up on the proper foods, kept a food journal... and just 7 days after eating Paleo style- I found it is NOT for me... Let me back up for just one second though, because in general, I am a very healthy eater- low fat, always whole grain..and as much as I love sweets, I eat everything in moderation! So when I decided to go Paleo, I thought this would be a good challenge for me to cut out all grains, sugar and dairy...and basically anything processed. But being someone who loves a little cheese (ok a LOT of cheese), and a good cocktail- a week into high protein meals had me feeling like one big meatball. I mean let's get real, a whole week of chicken, steak, eggs, veggies and avocado will definitely do that to you!

I don't like to think of myself as a quitter, or someone who starts something and never finishes, but when you know something isn't right- don't do it! I feel way healthier working out regularly and eating a balanced lifestyle. Whether or not that gets me into a bikini in one month, we shall see. But all I know is I am not going to beat myself up because I couldn't get through a month of what I set myself out to do...because it's just not practical and wasn't for me. I guess this post is turning into a "Don't feel bad about yourself" type of post...because to be honest, I felt a little guilty when I realized I wasn't going to make it through the month of eating a certain way. Always do what is right for you, even if you blasted it all over social media, because in the end YOU have to be happy, and to be happy you have to feel good! (Can I get a heck ya!?) 

And ironically I am going to end this post with a quote from my Dove Chocolate "It's okay to be flawed AND fabulous"...best piece of chocolate to date, AND more inspiring than any fortune cookie I've got! ;-)

Weekend Recap




 







Happy Monday Everyone!

Now that my sickness finally passed, I was able to fully enjoy this weekend-yay! If you follow me on Twitter or Instagram you probably have seen a few of the above pictures, but I thought I would share them again, and a few more of the weekend.

On Saturday my mom and I drove into the city and really couldn't have asked for a better day! We did some shopping, eating, and just had a ton of fun! It's funny because we are from the Bay Area originally, but my mom hadn't come into the city to tour around in quite some time- so it was a perfect opportunity to do just that. On Sunday I met with a girlfriend for mimosas, ran some errands, and watched the Grammy's-can we just say Adele..love!

I couldn't have asked for a better weekend, but back to the grind! What did you do this weekend?
